After graduating from the Institute of Culinary Education in New York City, Ava Johnson returned home to Wilmington, NC, to pursue her dream of opening a gluten-free bakery.
Ava has been a gluten-free baker since she was eight years old. After her older brother was diagnosed with celiac disease at just 18 months old, her entire family made the switch to a gluten-free lifestyle.
After working at several bakeries and gaining valuable experience, Ava wanted the freedom to maximize her creativity and create unique, gourmet-quality baked goods. That vision became Ava Johnson Bakes, LLC.
Today, Ava focuses on creating elevated gluten-free pastries and baked goods that are known for their quality, creativity, and uniqueness.

As a sole proprietor who has lived gluten-free for most of her life, Ava personally handles the baking and understands the importance of preventing gluten cross-contact.
