Caroline's Cottage Gluten-Free Bakery was created by Caroline Bangert after she was diagnosed with celiac disease at age 40. Before her diagnosis, Caroline loved baking and was known for her no-knead Italian bread. Going gluten-free meant giving up something she loved, but after struggling to find gluten-free bread with the taste and texture her family wanted, she returned to the kitchen.
Without professional culinary training, Caroline spent nearly two years learning, developing recipes, and refining her approach before launching Caroline's Cottage. Her goal was to create gluten-free breads and baked goods that bring back the taste, texture, and freedom that people often miss after going gluten-free.

Caroline's Cottage operates from a dedicated gluten-free, state-inspected home kitchen in South Wilmington. Caroline says her home and kitchen are entirely gluten-free, including her cleaning supplies.
Her kitchen is inspected through the NC Department of Agriculture Home Processor Program, and she holds a ServSafe food handler certification. Caroline takes food safety seriously and is committed to providing delicious gluten-free breads and baked goods for people living with celiac disease or gluten intolerance.
Caroline also emphasizes simple, health-focused baking, with no additives, no preservatives, and no unnecessary ingredients. All items are gluten-free and vegan, and full ingredient lists are available online for every menu item.
Her primary mission is to provide safe, delicious breads while giving gluten-free customers more choice and the confidence to enjoy foods they may have otherwise had to give up.
